Dumpling Sauce...
2 parts rice vinegar
1 part soy sauce
sugar to taste
any of the following (be gentle, these tend to be strong flavors):
several drops sesame oil
fresh grated or sliced ginger
Asian chili oil
several slices Japanese pickled ginger
wasabi powder
fresh scallion (green circlets)
peanut butter, Thai peanut sauce, ground peanuts
garlic
