yeah, why dont you just slap tomato sauce and cheese in a cup and drink it then.

For the same reason I dont wrap a burger in lettuce and eat it like that. The dough of a pizza makes it possible to eat it without causing a mess and being able to hold it. The same as a bun does for a hot dog or burger, or a pita does for a gyro, a cone for ice cream, etc etc. Its fucking bread, thats all it is and its not the focal point of the food. Sure a good crust is nice, so is a toasted bun but you dont get a burger for the bun.
