For supper. A huge m-f-ing batch. Breaded them in flour and seasonings, and fried them in vegetable oil and butter, minced onions and peppers.

Holy yummy batman.

Ummmmm, do you guys know what smelts are?

I do a slow cook, by filling one pot with water (to be followed by the grits), then placing the pot with the grits into a larger skillet filled with a thin layer of water. Bring the skillet's water up to a boil, then <b>BAM!</b> add the grits into the smaller pot.

Makes the grits happy happy.
